Ingredients

  • 2 1/2 cups low fat cottage cheese
  • 10 tbsp buffalo sauce
  • 15 oz cooked shredded chicken
  • 2 1/2 tsp ranch seasoning
  • 2 1/2 cups bell pepper
  • 1 1/4 cups celery or cucumber
  • 2 1/2 oz shredded cheddar cheese
  • 4 tbsp sliced green onion
  • 2–3 small avocados
  • 2/3 cup Greek yogurt or sour cream

Instructions

  1. 1Blend the cottage cheese with buffalo sauce until smooth.
  2. 2Mix the blended cottage cheese with shredded chicken and ranch seasoning in a large bowl.
  3. 3Fold in diced bell pepper and celery or cucumber until well coated.
  4. 4Divide the mixture into 5 oven-safe bowls and top each with shredded cheddar cheese.
  5. 5Microwave each bowl for 1–2 minutes or bake at 375°F (190°C) for 10–12 minutes until hot and bubbly.
  6. 6Top each bowl with sliced green onion, avocado, and a spoonful of Greek yogurt or sour cream before serving.
