A nice twist on a normal chicken breast dinner, I served it with zucchini and couscous. It can easily be modified to fit your taste or doubled to make additional servings.

Ingredients

  • 2 pieces thin sliced Chicken breast
  • 1/4 cup Panko bread crumbs
  • 1/2 cup Shredded cheddar cheese
  • 3-4 tbsp Bacon bits
  • 2-3 tbsp Sour cream
  • About 1 tsp Ranch seasoning
  • To taste Salt
  • To taste Pepper
  • To taste Garlic powder
  • To taste Onion powder
  • A drizzle Olive oil

Instructions

  1. 1Preheat the oven to 425°
  2. 2Season both sides of each piece of chicken with salt, pepper, garlic powder and onion powder. Place on an aluminum foil lined baking sheet.
  3. 3In a small bowl add 2-3 tbsp sour cream and about 1tsp ranch seasoning. Add more to taste if desired.
  4. 4In a separate bowl add 1/2 cup shredded cheese, 1/4 cup bread crumbs, 3-4 tbsp bacon bits, season to taste with garlic powder, onion powder or more ranch seasoning. Add a drizzle of olive oil and mix together.
  5. 5Evenly divide the sour cream between the two pieces of chicken, spread the sour cream into a thin layer.
  6. 6Divide the cheese mixture between the two pieces of chicken and gently press the mixture into the chicken to help it stick.
  7. 7Put in the oven for 25 minutes (or until it reaches the internal temp of 165°)
