Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 medium zucchinis
  • 1 pint cherry tomatoes
  • 1 red onion
  • 3 cloves garlic
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • to taste salt
  • to taste pepper
  • 3 tbsp olive oil
  • 1/2 cup feta cheese
  • for garnish fresh parsley

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Grease a baking dish with olive oil.
  3. 3In a large bowl, mix chicken, zucchinis, cherry tomatoes, red onion, garlic, oregano, basil, thyme, salt, pepper, and olive oil. Toss until everything is well coated.
  4. 4Transfer the mixture to the prepared baking dish. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the veggies are tender.
  5. 5Sprinkle crumbled feta cheese over the top and return to the oven for an additional 5 minutes or until the cheese is slightly melted.
  6. 6Garnish with fresh parsley and serve hot.
