Open in Pepper →A head of cabbage costs almost nothing, keeps for weeks in the crisper, and turns into dinner faster than you'd think. Fry it, roast it, or let it go soft in a pot of soup and it tastes like somebody cooked all day.
Cooks on Pepper reach for these when the fridge is looking thin, payday is still a few days out, or they want something hot and filling without another trip to the store.
Every recipe here is a real supper: fried cabbage with pierogies and sausage, cabbage roll casserole, unstuffed cabbage rolls bowl, Southern fried cabbage, Chinese chicken cabbage stir-fry, fried cabbage and potatoes with kielbasa, and balsamic roasted cabbage.
Cut out the core
Quarter the head and slice out the white core at an angle — it stays tough no matter how long you cook it.
Start with the bacon
Render 4 to 6 slices of chopped bacon first, then cook the cabbage in that fat for about 10 minutes.
Keep the pan hot
Cook cabbage over medium-high in a wide skillet so it browns instead of steaming; stir just every 2 to 3 minutes.
Roast at 425
Cut 1-inch wedges, oil both sides, and roast 25 to 30 minutes until the edges are dark and crisp.
