Use very ripe bananas
Wait until the peels are mostly black for the sweetest flavor and easiest mashing. Three medium bananas gives you about 1 1/2 cups.
Squeeze the zucchini dry
Shred it, then press it in a clean towel to wring out excess water so the loaf bakes through instead of staying gummy in the middle.
Bloom the cocoa first
Stir the cocoa powder with a few tablespoons of boiling water before mixing it in; it deepens the chocolate flavor and dissolves any lumps.
Cool before slicing
Let the loaf sit in the pan 10 minutes, then finish cooling on a rack at least 30 minutes so the slices hold together.
