Chocolate Bread Is Worth The Oven Time

A chocolate loaf splits the difference between bread and dessert, which means you can slice it for breakfast, tuck it in a lunchbox, or set it out when company drops by.

Cooks on Pepper reach for these when the bananas on the counter have gone spotty, when the garden hands over more zucchini than anybody asked for, or when a rainy Saturday calls for something in the oven.

Every recipe here is a chocolate loaf: Chocolate Banana Bread and Dark Chocolate Banana Bread, Double Chocolate Zucchini Bread and Chocolate Zucchini Bread, Chocolate Chip Chocolate Bread, Chocolate Loaf Bread, and a Chocolate Babka for when you feel like rolling dough.

Quick Tips

  1. 1

    Use very ripe bananas

Wait until the peels are mostly black for the sweetest flavor and easiest mashing. Three medium bananas gives you about 1 1/2 cups.

  2. 2

    Squeeze the zucchini dry

Shred it, then press it in a clean towel to wring out excess water so the loaf bakes through instead of staying gummy in the middle.

  3. 3

    Bloom the cocoa first

Stir the cocoa powder with a few tablespoons of boiling water before mixing it in; it deepens the chocolate flavor and dissolves any lumps.

  4. 4

    Cool before slicing

Let the loaf sit in the pan 10 minutes, then finish cooling on a rack at least 30 minutes so the slices hold together.
