The Loaf That Smells Like Fall

A loaf of apple bread does a lot of work for one pan. It's breakfast standing at the counter, it's an after-school snack, and it's the thing you carry to a neighbor when you don't know what else to bring.

Cooks on Pepper reach for these when the apples on the counter are getting soft, when the weather finally turns, or when they want the house to smell like cinnamon by dinnertime.

Every recipe here is a real apple loaf someone bakes on repeat — Apple Fritter Bread with its brown sugar swirl, Country Apple Fritter Bread, a plain Apple Bread, Banana Apple Bread made with sour cream, a vegan version, Braided Apple Bread with Granny Smiths, and a Snickerdoodle apple bread.

Snickerdoodle apple bread rounds it out.

Quick Tips

  1. 1

    Pick a firm apple

Granny Smith or Honeycrisp hold their shape through 50 to 60 minutes of baking instead of turning to mush.

  2. 2

    Dice apples small

Cut them into 1/2-inch pieces so they cook through and don't sink to the bottom of the loaf.

  3. 3

    Swirl the sugar layers

Spoon in half the batter, scatter the cinnamon-brown sugar, then repeat and drag a knife through 3 or 4 times.

  4. 4

    Cool before slicing

Let the loaf sit in the pan 10 minutes, then finish cooling on a rack at least 30 minutes so it slices clean.
