Open in Pepper →Cabbage rolls taste like somebody's grandmother made them, but nobody has an hour on a Tuesday to blanch leaves and roll each one by hand. Layer the same beef, rice, cabbage and tomato in a baking dish and you get that soft, savory supper with a fraction of the work.
Cooks on Pepper reach for this collection when the weather turns cold, when a head of cabbage has been sitting in the crisper too long, or when they want one dish that feeds the whole table with leftovers for lunch.
Every recipe here is built on ground beef, rice and cabbage: the top-saved Cabbage Roll Casserole, a slow cooker version, an Unstuffed cabbage rolls bowl, a Cheesy Cabbage Casserole, and Old-Fashioned Cabbage Rolls and Stuffed Cabbage Rolls for the nights you want to do it the long way.
Brown the beef first
Cook the ground beef with the onion 6 to 8 minutes until no pink remains, then drain the fat so the casserole doesn't turn greasy.
Use uncooked rice carefully
If the recipe calls for uncooked rice, make sure there's enough tomato liquid to cover it and bake covered a full 60 minutes so it softens.
Chop cabbage evenly
Cut the cabbage into 1-inch pieces so it cooks down at the same rate as the meat instead of leaving crunchy ribs.
Let it rest
Pull the dish from the oven and let it sit 10 minutes so the juices settle and it scoops up cleanly.
