Ingredients

  • 1/2 pound breakfast sausage
  • 3-4 slices bacon
  • 6 eggs
  • 1 cup Parmesan cheese
  • 1/2 cup shredded cheddar
  • 1/2 cup heavy cream
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp chili powder
  • 1 sliced jalapeño
  • 1/2 diced shallot
  • 1 tbsp minced garlic

Instructions

  1. 1Add your breakfast sausage to a preheated frying pan and break it apart while browning. Set aside in a bowl once done.
  2. 2Add bacon to the sausage pan and cook until almost done. Set on a paper towel and let grease dry up a little bit.
  3. 3Add your diced up shallot to the hot pan for a few minutes and then add the minced garlic. Cook for about one minute more and then carefully scoop out with a slotted spoon and set in a bowl.
  4. 4In a blender or by hand, whisk up 6 eggs until nice and smooth. Add cheeses, heavy cream, salt, pepper, garlic and chili powder and mix in well.
  5. 5Preheat oven to 350 degrees and spray or line a cupcake pan with cupcake liners.
  6. 6Add about a tbsp crumbled sausage on the bottom of each section. Pour egg batter on top of each sausage section until just under full. Top each with a slice of Jalapeno. Surround jalapeño slices with some crumbled up bacon.
  7. 7Bake for about 15 minutes and then pull to top with a small amount of cheese on each cupcake. Bake for 5 more minutes and then pull to rest. Give it a few minutes and pull them from the pan.

Breakfast Sausage Earns Its Place All Day

A pound of breakfast sausage browns in about 8 minutes and turns into breakfast, dinner, or something you carry out the door. That's why it stays in the freezer.

Cooks on Pepper reach for this collection on school mornings, on holiday mornings when people are standing around the kitchen, and on the nights when breakfast for supper is the only thing everybody agrees on.

Every recipe here starts with that same pound of sausage: Carnivore Breakfast Sausage Egg Cups, Breakfast Sausage Crescent Rolls, Breakfast Sausage Dip with cream cheese and Velveeta, Breakfast Sausage Balls with hash browns, Breakfast Sausage and Potato Burritos, and sausage gravy over plain bagels.

Quick Tips

  1. 1

    Brown the sausage first

Cook bulk sausage in a dry skillet over medium heat for 8 to 10 minutes, breaking it up as you go, until no pink remains.

  2. 2

    Drain but save a spoonful

Pour off the grease, then keep 2 tablespoons in the pan for gravy — that's where the flavor for sausage gravy bagels comes from.

  3. 3

    Grease the muffin tin well

Egg cups and egg muffins stick fast; butter every cup or use liners, and let them cool 5 minutes before lifting them out.

  4. 4

    Thaw hash browns completely

Wet potatoes make sausage balls and casseroles soggy, so pat the hash browns dry with paper towels before mixing.
