Ingredients

  • 1 Kielbasa
  • 16 oz Pasta of your choice
  • 3 Tbsp Butter
  • 2 Tbsp Minced Garlic
  • 1 cup Heavy Whipping Cream
  • 16 oz Tomato sauce
  • 3 Tbsp Tomato Paste
  • 1/2 cup Parmesan Cheese
  • 1 tsp Italian Seasoning
  • To taste Salt
  • To taste Pepper

Instructions

  1. 1Slice your kielbasa into half inch rounds and brown them over medium heat in a large skillet. In a separate pot boil water, add salt, and pasta and cook accordingly to the directions on the box.
  2. 2As your pasta cooks, remove your browned sausage from the skillet and add in the butter and minced garlic.
  3. 3When the garlic is slightly browned and fragrant, add in heavy whipping cream, tomato sauce, Parmesan cheese, and tomato paste. Stir the sauce to combine and reduce heat as the sauce thickens.
  4. 4Season your sauce with a teaspoon of Italian seasoning and salt and pepper to taste. You can add in a small amount of your pasta water to thicken the sauce.
  5. 5Drain your pasta, add it to your sauce and give it a stir to coat the pasta. Add in your browned sausage and sprinkle some extra parm over the top!

Sausage Does The Heavy Lifting

Sausage is already seasoned and already cooked through in most cases, so it does the work of a long-simmered dinner in about twenty minutes. Slice it, brown it, and whatever you add to the pan tastes like you fussed.

Cooks on Pepper reach for this collection on the nights the calendar is full — practice, homework, late shift — and there's a pack of kielbasa in the fridge and pasta in the pantry.

Every recipe here leans on that: Creamy Sausage Pasta and One pot smoked sausage pasta for the fastest nights, Shrimp and Smoked Sausage Cajun Pasta and Spicy Italian Sausage Rigatoni when you want heat, Smoked Sausage and Brussel Sprouts and Easy Veggies and Sausage dinner for a sheet-pan kind of night, plus Cheesy Sausage Biscuits and Tator Tot, Sausage, Egg, & Cheese Muffins for mornings.

Quick Tips

  1. 1

    Brown the sausage first

Sear the slices 4 to 5 minutes in a dry or lightly oiled pan until the edges are dark. Those browned bits are the whole flavor base for the sauce.

  2. 2

    Cut coins on an angle

Slice smoked sausage on a diagonal about 1/2 inch thick so you get more surface area touching the hot pan.

  3. 3

    Deglaze before adding cream

Pour in a splash of broth or the tomatoes and scrape the pan for 30 seconds before any dairy goes in, so nothing scorches.

  4. 4

    Save some pasta water

Keep 1/2 cup of the starchy cooking water and stir it in a splash at a time to loosen a cream sauce that's gone too thick.
