Brown the sausage first
Sear the slices 4 to 5 minutes in a dry or lightly oiled pan until the edges are dark. Those browned bits are the whole flavor base for the sauce.
Cut coins on an angle
Slice smoked sausage on a diagonal about 1/2 inch thick so you get more surface area touching the hot pan.
Deglaze before adding cream
