Open in Pepper →Chicken sausage comes out of the package already seasoned and already cooked through, so half the flavor work is done before you turn on the stove. Slice it, brown it, and whatever you add next tastes like you planned it.
Cooks on Pepper reach for this collection on nights when there's no thawing time and no patience left — one skillet, one sheet pan, dinner on the table before anybody asks what's taking so long.
Every recipe here leans on that shortcut: spicy chicken sausage with veggies and pasta, Chicken Sausage Fettuccine with diced jalapeño, a breakfast skillet with potatoes and green pepper, a rainbow sheet pan meal with bell peppers and red onion, creamy pepper jack chicken and sausage pasta, and a cast iron skillet chicken sausage pizza for Friday.
Slice on a bias
Cut the links into 1/2-inch coins at an angle so you get more flat surface touching the pan and better browning in the same 5 minutes.
Brown the sausage first
Give the slices 4 to 5 minutes in a hot skillet before adding vegetables, then build the rest of the dish on those browned bits.
Save a cup of pasta water
Scoop out 1 cup before draining and splash it in a few tablespoons at a time to loosen the sauce and help it cling.
Crowd nothing on the sheet pan
Spread sausage and peppers in a single layer on a large pan and roast at 400°F for 20 to 25 minutes so they roast instead of steam.
