Ingredients

  • cover the bottom of the cast iron Tater tots
  • 2 cups Shredded cheese
  • 1 large Tomatoes (diced)
  • 1/2 package Bacon (diced)
  • 6 Eggs
  • 1/2 cup Heavy cream
  • 1/2 cup Onion (diced)
  • Seasonings if your choice

Instructions

  1. 1Take your cast iron skillet and lay out your tatertots on their side. Place in the oven at 350 and cook until they are squishy (not fully cooked) (about 15-20 minutes)
  2. 2While that’s in the oven dice up your bacon and fry it up to your liking. Remove from pan and remove about half of the bacon grease) place your onion into the bacon grease and cook until translucent.
  3. 3Once all of that done finish dicing up your tomato and scrambling your eggs and heavy cream together and adding your seasoning into the eggs and mixing well.
  4. 4Your tots should be done you take it out and use a spatula and press down on them so you squish them together to fill in the gaps of the skillet.
  5. 5Sprinkle some cheese on top of the tots, over the cheese with the egg mixture, add in your onions, tomatoes, and any other toppings you added. Place in the oven and cook about 30 minutes covered.
  6. 6After 30 minutes check it and if it’s not 90% cooked place it back in there covered and cook until most of it is cooked.
  7. 7When most is cooked add the rest of the cheese on top and cook the rest of the way.
  8. 8Serve and enjoy!

One Pan Of Eggs Feeds Everybody

A breakfast casserole is the one dish that lets you cook eggs for eight people without standing at the stove flipping them. You build it the night before, slide it in the oven, and pour coffee while it bakes.

Quick Tips

    Brown the sausage first

    Cook a pound of breakfast sausage until no pink remains, about 8 to 10 minutes, and drain the grease or the casserole turns oily.

    Soak it overnight

    Assemble bread or biscuit casseroles the night before and chill at least 8 hours so the eggs soak all the way through.

    Bake until the center sets

    Give it 45 to 55 minutes at 350°F; a knife in the middle should come out clean, not wet.

    Rest before you cut

    Let it sit 10 minutes out of the oven so the squares hold together on the plate.
