Brown the sausage first
Cook a pound of breakfast sausage until no pink remains, about 8 to 10 minutes, and drain the grease or the casserole turns oily.
Soak it overnight
Assemble bread or biscuit casseroles the night before and chill at least 8 hours so the eggs soak all the way through.
Bake until the center sets
Give it 45 to 55 minutes at 350°F; a knife in the middle should come out clean, not wet.
Rest before you cut
Let it sit 10 minutes out of the oven so the squares hold together on the plate.
