Ingredients

  • 12 ounces rotini pasta
  • 1 pound ground beef
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 2 tablespoons olive oil or butter
  • for garnish fresh parsley, chopped

Instructions

  1. 1Cook the pasta in salted boiling water according to package instructions. Drain and set aside.
  2. 2In a large skillet, heat olive oil or butter over medium heat. Add ground beef and cook until browned, breaking it apart. Drain excess fat.
  3. 3Add minced garlic to the beef and cook for 1-2 minutes until fragrant.
  4. 4Sprinkle flour over the beef and garlic mixture, stir well.
  5. 5Slowly pour in milk while stirring continuously to prevent lumps. Bring to a simmer and cook for 3-4 minutes until the sauce thickens.
  6. 6Stir in Parmesan cheese and Italian seasoning until cheese melts and sauce becomes creamy. Season with salt and pepper.
  7. 7Add cooked pasta to the skillet, toss to coat in the sauce, and cook for 2-3 minutes.
  8. 8Serve hot, garnished with chopped parsley.

A Pound Of Ground Beef Goes Far

A pound of ground beef in the fridge means dinner is already half decided. Brown it, add pasta or rice, and you've got something everybody at the table will actually eat.

Cooks on Pepper reach for these on Tuesdays and Wednesdays, when practice runs late and there's no room for a long recipe or a sink full of pans.

Every recipe here leans on beef and pantry staples: Creamy Beef and Shells in Garlic Parmesan Sauce, One-Pot Creamy Beef and Garlic Butter Pasta, Ground Beef Goulash, Beef Stroganoff, Ground Beef Stuffed Bell Peppers, plus Mongolian Beef and Homemade Beef Jerky when you want a project.

Quick Tips

  1. 1

    Brown the beef hard

Spread the beef in a hot skillet and leave it alone 3 to 4 minutes before breaking it up, so it browns instead of steaming.

  2. 2

    Drain but save a spoonful

Pour off the grease from a pound of ground beef, then leave about 1 tablespoon in the pan to cook your garlic and onion in.

  3. 3

    Cook pasta in the sauce

For one-pot pasta, simmer the dry noodles right in 3 to 4 cups of broth so the starch thickens the sauce for you.

  4. 4

    Slice flank steak thin

Freeze flank steak 20 minutes, then cut across the grain into 1/4-inch strips so it stays tender in a quick stir-fry.
