Open in Pepper →Banana cream pie is the dessert that disappears first. Soft custard, sliced bananas, a crust that holds up, and enough whipped topping to make it look like Sunday even when it's Tuesday.
Cooks on Pepper reach for this collection when the bananas on the counter have gone spotty, when company is coming, or when somebody asks for pie and there's no time to bake one from scratch.
Every recipe here is some version of that pie: the classic Banana Cream Pie with a pre-baked crust, a graham cracker one, No Bake Banana Cream Pie with instant pudding, Chocolate Banana Cream Pie on an Oreo crust, Easy No-Bake Blueberry Banana Cream Pie, plus Banana Cream Pie No-Churn Ice Cream, chia puddings, and yogurt bites for the freezer.
Cook the custard slowly
Whisk the sugar and cornstarch filling over medium heat and keep whisking 2 to 3 minutes after it bubbles, or the cornstarch won't set up.
Chill at least four hours
A cream pie needs 4 hours cold, overnight if you can wait, or the first slice slides right off the server.
Slice bananas last
Cut them right before layering and use bananas that are just spotty, not soft, so they hold their shape for a day or two.
Press the crumb crust firm
Pack graham or Oreo crumbs with melted butter using the bottom of a measuring cup, then freeze 15 minutes before filling.
