Banana Cream Pie

Ingredients

  • 1 pre-baked 9-inch pie crust
  • 1 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 4 egg yolks
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, sliced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. 1Whisk together sugar, cornstarch, and salt in a saucepan. Slowly whisk in the milk until smooth. Cook over medium heat, stirring constantly, until thickened and bubbling (about 8–10 minutes). In a small bowl, whisk egg yolks. Slowly add a little hot pudding mixture into the yolks to temper them. Pour the egg mixture back into the saucepan and cook 1–2 more minutes, stirring constantly. Remove from heat and stir in butter and vanilla.
  2. 2Layer sliced bananas in the bottom of the baked pie crust. Pour the warm pudding over the bananas. Press plastic wrap directly onto the surface and refrigerate for at least 4 hours until set.
  3. 3Beat heavy cream, powdered sugar, and vanilla until soft peaks form. Spread or pipe over the chilled pie.
  4. 4Finish and serve
