Mix with your hands
Use your fingers and stop as soon as everything looks combined, about 30 seconds. Overworking the meat makes the baked meatballs dense.
Scoop them the same size
A cookie scoop or heaping tablespoon gets you even 1½-inch balls so they all finish cooking at the same time.
Bake on a lined sheet
Parchment on a rimmed sheet pan at 400°F keeps the bottoms from sticking, and they're done in about 18 to 20 minutes.
Check the middle
Chicken and turkey meatballs are done at 165°F in the center — cut one open if you don't have a thermometer.
