Mix the meat gently
Stir ground beef, pork, and veal with your hands just until combined, about 30 seconds. Overworking it makes the meatballs tough and dense.
Brown before the slow cooker

Scoop them the same size
Use a cookie scoop for even 1 1/2-inch meatballs so they all finish cooking at the same time.
Thin the sauce if needed
