Meatballs Make A Weeknight Easy

A pan of meatballs stretches further than almost anything else. They go over noodles, on a roll, or straight out of the slow cooker with toothpicks, and nobody complains about leftovers.

Cooks on Pepper reach for this collection when the day got away from them, when company is coming Saturday, or when there's a bag of frozen meatballs in the freezer and thirty minutes to work with.

Every recipe here is a real supper or a real party tray: Italian Meatballs made with beef, veal, and pork, Crockpot Swedish Meatballs, Slow Cooker Mississippi Meatballs, Marry Me Meatballs, Bourbon Meatballs with ketchup and brown sugar, meatball hoagies, and Slow Cooker Italian Meatball Gnocchi with Spinach and Parmesan.

Quick Tips

  1. 1

    Mix the meat gently

Stir ground beef, pork, and veal with your hands just until combined, about 30 seconds. Overworking it makes the meatballs tough and dense.

  2. 2

    Brown before the slow cooker

Sear meatballs 2 to 3 minutes per side in a hot skillet before they go in with the gravy or soup. It keeps them from falling apart over 4 hours on low.

  3. 3

    Scoop them the same size

Use a cookie scoop for even 1 1/2-inch meatballs so they all finish cooking at the same time.

  4. 4

    Thin the sauce if needed

Cream of mushroom or chicken soup thickens as it sits, so stir in 1/4 cup of broth at the end until it coats a spoon.
