Open in Pepper →Avocado toast is the meal you make when the fridge is thin and you still want something that tastes like you tried. Good bread, a soft avocado, a little salt, and it holds you until lunch.
Cooks on Pepper reach for these on rushed weekday mornings, on Saturdays when nobody wants to cook, and on those nights when eggs and toast are dinner and that's just fine.
Every recipe here starts with mashed avocado on toast and goes somewhere: Avocado Toast & Poached Egg, Pesto Egg Avocado Toast, grated egg avocado toast on sourdough, Avocado Egg Toast with Spicy Chili Oil, and Avocado toast 2.0 with almond butter and spinach.
Check the avocado stem
Pop off the little stem nub — green underneath means ripe, brown means it's past it. A ripe one gives slightly when you press near the top.
Toast the bread dark
Sourdough or wheat holds up better with 3 to 4 minutes of real browning. Soft toast turns soggy under wet avocado in about a minute.
Salt the avocado itself
Mash with a pinch of salt and a squeeze of lemon before it hits the bread, so every bite is seasoned instead of just the top.
Poach eggs in a swirl
Bring water to a bare simmer, add a splash of vinegar, stir a whirlpool, and slip the egg in for 3 minutes for a runny yolk.
