Egg Noodles Make Dinner Feel Done

Egg noodles cook in about ten minutes and soak up whatever gravy or creamy sauce you pour over them. That makes them the shortcut between a pound of ground beef and a full supper.

Cooks on Pepper reach for this collection on the nights everybody's hungry at once and there's nothing thawed but hamburger and a can of soup in the cabinet.

Every recipe here leans on that noodle: Creamy Beef & Egg Noodle Casserole, One-Pan Chicken and Egg Noodles, Slow Cooker Beef and Egg Noodles, Egg Noodle "Lasagna," Haluski with fried cabbage and kielbasa, Small-Batch Salisbury Steaks, and Homemade Egg Noodles when you want to roll your own.

Quick Tips

  1. 1

    Undercook the noodles slightly

Pull them 2 minutes before the package says if they're going into a casserole or slow cooker; they keep soaking up liquid as they bake.

  2. 2

    Brown the beef first

Cook a pound of ground beef over medium-high for 6 to 8 minutes and drain the grease so your sauce doesn't turn oily.

  3. 3

    Save a cup of water

Reserve 1 cup of the starchy cooking water before draining and splash it in to loosen a sauce that got too thick.

  4. 4

    Add noodles at the end

In the slow cooker, stir uncooked egg noodles in during the last 20 to 30 minutes so they don't go to mush.
