This is my all-time favorite noodle dish but most people haven’t heard of it. It is incredibly easy to make and the hearty deliciousness just makes my heart sing. It’s best with hand-pulled noodles, but there are great frozen options that are more practical.

The sauce-to-noodle ratio matters more than the recipe. Toss noodles in the pan with the sauce — not on the plate — so every strand gets coated.
Save a splash of pasta water (or noodle cooking water). That starchy liquid emulsifies sauce and clings to noodles in a way water alone can't.
Toss in the pan, not the bowl
Adding sauce on top of plated noodles gives uneven coverage. Toss everything together in the hot pan for even seasoning.
Salt the cooking water
Even Asian noodles benefit from salted water. Bland noodles need way more sauce to compensate.
Save the noodle water
A splash of starchy noodle water loosens thick sauces and helps them cling — better than oil or extra liquid.
Don't rinse, unless cold
Hot noodle dishes lose their sauce-grabbing starch when rinsed. Only rinse for cold noodle salads where you want them slippery.
