Classic Southern Meatloaf

Ingredients

  • 1 1/3 lbs Ground beef
  • 1 medium Yellow onion
  • 1 medium Green bell pepper
  • 2 cloves Garlic
  • 1 tbsp Olive oil
  • 2 slices White bread
  • 1/4 cup Milk
  • 1 Large egg
  • 1 tbsp Paprika
  • 1 tsp Cumin
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1/2 tsp Black pepper
  • 2 tsp Kosher salt
  • 2 tbsp Worcestershire sauce
  • 1/4 cup Ketchup
  • 1 tbsp Brown sugar
  • 1 tbsp Worcestershire sauce

Instructions

  1. 1Chop the onion, bell pepper, and garlic into a fine dice. Add the vegetables to a small heated skillet with 1 tbsp olive oil and cook over medium heat until soft but not browned, about 5 minutes. Set aside to cool.
  2. 2In a large bowl tear the bread and soak with milk for about 15 minutes until very soft and mash into paste.
  3. 3To the bowl with bread and milk add the ground beef, sautéed vegetables, seasonings, 2 tbsp worcestershire sauce. Mix thoroughly until well combine.
  4. 4In a baking dish 9"x11" lightly grease the pan and add the meatloaf to the pan and shape in an even loaf.
  5. 5Place in a 375° oven and bake for 40 minutes. Remove from oven and crank up the heat to 425°.
  6. 6In a small bowl combine the ketchup, brown sugar, and 1 tbsp worcestershire sauce.
  7. 7Top the meatloaf with the ketchup mixture and return to the oven for 20 minutes. Enjoy!

Meatloaf That Fits A Weeknight

    Shape a flat loaf

    Pat the mixture into a loaf about 2 inches tall so the center cooks through before the outside dries out.

    Line the basket first

    Use a piece of foil or parchment with the edges turned up to catch grease, and leave an inch of space around the loaf for air to move.

    Add glaze at the end

    Brush ketchup or brown sugar glaze on during the last 5 to 8 minutes so the sugar browns instead of burning.

    Check the center temp

    Pull beef loaves at 160°F and chicken loaves at 165°F, checking the thickest part with a thermometer.
