These mini turkey meatloaf muffins are a lean, delicious, and fun way to enjoy meatloaf. Made with ground turkey and packed with flavor, they are kid-friendly and perfect for a quick dinner or meal prep.

Ingredients

  • ½ cup, minced small Bell pepper (orange, red, or yellow)
  • ½ cup, minced small Onion
  • 1 pound Ground turkey
  • ½ cup Old Fashioned Oats or Quick Oats
  • 1 large Egg
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • ½ teaspoon Granulated garlic
  • 1 teaspoon Soy sauce
  • ½ cup, for topping BBQ sauce

Instructions

  1. 1Preheat oven to 375°F (190°C). Spray muffin pan wells with oil.
  2. 2Mince the bell pepper and onion into very small pieces using a food processor or knife.
  3. 3In a large bowl, combine bell pepper, onion, ground turkey, oats, egg, salt, pepper, garlic, and soy sauce. Mix until just combined, using hands or a spatula.
  4. 4Portion the mixture into muffin cups using a quarter cup measure, filling each well evenly.
  5. 5Bake for 30-35 minutes. Then, brush the tops with BBQ sauce and bake for an additional 5-10 minutes, until internal temperature reaches 165°F.
  6. 6Remove from oven, let cool slightly, and serve. These muffins can be stored in the freezer for meal prep.

    Stir the breadcrumbs or stuffing mix into about 1/2 cup milk and let it sit 5 minutes before mixing. That moisture is what keeps lean turkey from drying out.
