Soak the crumbs first
Stir the breadcrumbs or stuffing mix into about 1/2 cup milk and let it sit 5 minutes before mixing. That moisture is what keeps lean turkey from drying out.
Bake it in muffin tins
Divide the mix into 12 muffin cups and bake at 375°F for 25 to 30 minutes — about half the time of a full loaf, with more browned edges.
