Quoted from my fiancé- "This is my favorite meal you've ever made" and I make dinner about 4 nights a week so you know it's good. This also makes an excellent sandwich the next day on some garlic bread if you don't finish it in one meal.

Ingredients

  • 2 lbs Ground beef
  • 1 small Yellow onion
  • 1 tbsp Olive oil
  • 3 slices White bread
  • 1/2 cup Milk
  • 2 Egg
  • 1/4 cup Worcestershire sauce
  • 2 tsp Paprika
  • 1/4 tsp Cumin
  • 1 tsp Garlic powder
  • 1 tbsp Kosher salt
  • 1 1/2 tsp Black pepper
  • 1/4 cup Ketchup
  • 1 tbsp Brown sugar

Instructions

  1. 1Chop and Sautee the onion over medium heat. Cook until soft and translucent. Set aside to cool. Preheat the oven at this time also to 375°.
  2. 2In a large bowl crumble the bread into small pieces and add milk. Let it sit for about 5 minutes until bread has fully absorbed and very moist but not soupy. Mash it into a paste.
  3. 3Add the sautéed onion, eggs, ground beef, 3 tablespoons of worcestershire sauce ( the remainder will go into the glaze), smoked paprika, cumin, salt and pepper. Combine well until everything is evenly distributed. Don't overmix though or else your meatloaf will be tough. Trust your instinct.
  4. 4In a greased casserole or oven safe dish add the meatloaf mixture and form into a loaf shape. It doesn't have to be perfect but try to make it as even as possible so it cooks evenly. Place meatloaf in your preheated oven and bake uncovered for 40 minutes.
  5. 5To make the glaze topping in a small bowl combine ketchup, remaining 1 tablespoon of worcestershire sauce, and brown sugar.
  6. 6After 40 minutes remove the meatloaf and add ketchup glaze on top and spread evenly. Increase oven temperature to 400° and bake for another 20 minutes.
  7. 7Serve hot with your favorite sidedish and enjoy!

    Cook the onion first

    Soften diced onion in a tablespoon of olive oil or butter for 5 to 6 minutes before mixing it in, so it isn't crunchy in the finished loaf.

    Lean beef dries out. An 80/20 or 85/15 blend keeps a 2-pound loaf juicy through a full hour in the oven.

    Glaze in two coats
