Pound the breasts even
Cover chicken with plastic and pound to about 1/2 inch thick so the middle finishes at the same time as the edges.
Spray the breading
Mist the crumbed chicken lightly with oil on both sides before cooking — dry breadcrumbs stay pale and dusty without it.
Add cheese at the end
Cook the chicken through first, then top with mozzarella and Parmesan for the last 2 to 3 minutes so it melts instead of burning.
Cook in one layer
Leave an inch between pieces and work in 2 batches if you need to; crowded chicken steams and the crust goes soft.
