The Chicken Dinner Everybody Actually Finishes

Breaded chicken, red sauce, melted cheese — it's the plate nobody pushes around. You can pound the breasts thin on a Tuesday and still have it on the table before homework is done.

Cooks on Pepper reach for this collection when they need a dinner that feeds picky kids and hungry teenagers at the same table, or when there's a pound of chicken breast in the fridge and no plan for it.

Every recipe here is a real version of it: the classic Chicken Parmesan with just salt and pepper on the chicken, Crispy Chicken Parmesan with the egg-and-breadcrumb coating, a panko-and-Parmesan Baked Chicken Parmesan, and an Air Fryer Chicken Parmesan for nights you don't want to stand over a skillet.

Quick Tips

  1. 1

    Pound the chicken thin

Flatten each breast to about 1/2 inch so it cooks through in 6 to 8 minutes without drying out the edges.

  2. 2

    Set up three dishes

Flour, beaten eggs, then breadcrumbs — press the crumbs on firmly and let the cutlets rest 10 minutes so the coating sticks.

  3. 3

    Add cheese at the end

Sauce and cheese go on in the last 5 minutes of cooking so the crust underneath stays crisp instead of turning soggy.

  4. 4

    Don't crowd the pan

Fry two cutlets at a time in hot oil, about 3 minutes a side, so the temperature doesn't drop and the breading browns evenly.
