Cut even pieces
Slice the breast into 1 to 1 1/2-inch chunks so they all finish at the same time. Uneven pieces mean some are dry before others are done.
Soak in buttermilk or pickle juice
Give the chicken 30 minutes in milk with lemon juice or pickle juice. It seasons the meat all the way through and helps the coating stick.
Spray the coating
Mist both sides with cooking spray before they go in, then again at the flip. Dry breading turns chalky instead of golden.
Don't crowd the basket
Cook in a single layer with space between pieces, about 10 to 12 minutes at 400°F, flipping halfway. Two batches beat one soggy one.
