Open in Pepper →A bowl of pistachio pudding, crushed pineapple, marshmallows and whipped topping takes about ten minutes and feeds a crowd. It sits in the fridge while you deal with everything else.
Cooks on Pepper reach for these when they've been asked to bring a side to a church supper, a holiday table, or a birthday cookout and don't want one more thing in the oven.
Every recipe here is stirred together cold, from two versions of Watergate Salad to Pineapple Fluff, Strawberry Fluff Salad, Mrs. Hardins Ambrosia Salad, and a Snickers Caramel Apple Fluff Salad.
Leave the pineapple undrained
The juice is what dissolves the instant pudding mix, so dump the whole can in. Draining it leaves you with gritty powder.
Thaw the whipped topping
Move the 8 oz tub to the fridge about 4 hours ahead. Thawing it on the counter makes it soupy and the salad won't hold.
Chill at least an hour
Give it 60 minutes in the fridge, covered, so the marshmallows soften and the pudding sets up.
Add nuts and candy last
Fold in chopped pecans or Snickers pieces right before serving so they stay crunchy instead of going soft overnight.
