Walking Taco Casserole

A fun and flavorful casserole that combines all the classic flavors of a walking taco in a baked dish, layered with ground beef, cheese, beans, tomatoes, and crunchy Fritos.

Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 package taco seasoning
  • ½ cup water
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes with green chiles
  • ½ cup sour cream
  • 1 bag (9.25 ounces) Fritos corn chips
  • 2 cups Mexican-style shredded cheese

Instructions

  1. 1Preheat oven to 350°F and spray a 13x9-inch baking dish with nonstick spray.
  2. 2In a large skillet, brown the ground beef until almost cooked. Add chopped onions and cook until soft and beef is no longer pink.
  3. 3Stir in taco seasoning and water, bring to a boil.
  4. 4Reduce heat, add black beans, diced tomatoes with chiles, and sour cream. Cook for 8-10 minutes until heated through and slightly thickened.
  5. 5Layer a portion of Fritos in the bottom of the prepared baking dish. Sprinkle with 1 cup of shredded cheese.
  6. 6Add a layer of the beef mixture over the chips and cheese. Top with remaining cheese.
  7. 7Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 5 minutes until cheese is melted and bubbly.
  8. 8Remove from oven, top with additional Fritos and your favorite toppings such as sliced green onions, sour cream, guacamole, salsa, and jalapenos.

    Squeeze each single-serving chip bag once or twice before opening so the chips break into bite-size pieces.

    Hold the chips for baking

    For the casserole and bake, scatter the Fritos on top in the last 10 minutes so they stay crunchy under the cheese.
