Sear the roast first
Brown all sides of the chuck roast in a hot skillet with a tablespoon of oil, 3 to 4 minutes per side, before it goes in the slow cooker.
Cook it long enough
Chuck needs 8 hours on low or about 5 on high. If it fights the fork, it isn't done — give it another hour.
Shred in the juices
Pull the beef apart with two forks right in the pot so it soaks the liquid back up instead of drying out on a cutting board.
Toast the dried chiles
For birria, press the guajillo and ancho chiles in a dry skillet 30 seconds a side until they smell nutty, then soak in hot water 20 minutes.
