Carne Asada steak tacos w/ fresh Pico

Ingredients

  • 1lb Flat Iron steak
  • 3-4 Limes (juiced)
  • 1/2 cup or so Orange juice
  • 1/2 cup’ish Soy sauce
  • 1cup’ish+ Fresh chopped cilantro
  • Whole bulb Chopped garlic
  • 2 tablespoons or more Chili powder
  • 1 tablespoon Cumin
  • To taste Salt
  • 1 whole diced White onion (I like it)
  • 2 fine diced Jalapeños (I like it)
  • ? Onion powder
  • ? Garlic powder

Instructions

  1. 1Mix everything except steak in a bowl and set to the side.
  2. 2Trim fat and toughness off the steak. Then beat the hell out of it to tenderize it.
  3. 3I used a glass rectangle baking dish and put a layer of my mixture on the bottom then the steak then pour the rest on top of the steak. Wrap it and put in fridge for at least 4-6 hours.
  4. 4When ready to cook get a pan hot with oil then sear of the steak on both sides (about 2 minutes on each side) then set aside.
  5. 5Run marinade though the blender until smooth.
  6. 6Slice steak across grain as thin as possible. In large pan pour in blended marinade and get it hot to bubbling the QUICKLY sauté the steak in it getting fully coated then remove the steak and put on a pan to the side. I trash the marinade at this point.
  7. 7Get a pan big enough for your tortilla shells. Looking at the pan your steak is resting on you will see a puddle of juice forming. Dip your tortilla in the juice then flat in the pan. Let crisp for about 30 seconds then flip. Lay a few pieces of steak on 1/2 the tortilla add cheese and some Pico (I’ll do a recipe later but very basic with a few secrets) then fold in half. When crispy on both sides pull from pan.
  8. 8I drizzled a chipotle ranch on these and devoured them. Enjoy.

Steak Tacos Are A Weeknight Answer

A pound of steak, a squeeze of lime, and a stack of warm tortillas feeds more people than you'd think. The marinade does most of the work while you're doing something else, and the cooking part takes minutes.

Quick Tips

    Marinate at least an hour

    Lime or orange juice with oil and garlic needs 1 to 4 hours on skirt or flank steak. Much past 8 hours and the surface turns mushy.

    Get the pan screaming hot

    Skirt and flat iron want high heat and about 3 to 4 minutes a side. You're after a dark crust, not a slow cook.

    Rest before you slice

    Let the steak sit 5 to 10 minutes on the board so the juice stays in the meat instead of running onto your cutting board.

    Slice against the grain

    Find the direction the fibers run and cut across them in thin strips, about 1/4 inch, so every bite chews easy.
