Open in Pepper βA good Waldorf salad is mostly about crunch. Chopped apples, celery and grapes stirred into something creamy stays cold in the fridge and tastes just as good the second day, which is more than most salads can say.
Cooks on Pepper reach for these when they need a side that doesn't heat up the kitchen β a potluck bowl, a Sunday ham dinner, or a lunch that has to stretch across a few days.
Every recipe here sticks to that apple-and-celery backbone. There's the classic Apple Salad with Honeycrisps, lemon and mayonnaise, a traditional Waldorf Salad with red seedless grapes, a crunchy Celery Apple Salad with cucumber, a sour cream Composed Waldorf Salad, a Healthier Mayo Free Waldorf Salad, and a Chicken Waldorf Slaw that eats like supper.
Toss apples with lemon
Squeeze lemon juice over the chopped apples right away, about 1 tablespoon per 2 apples, so they stay pale while you cut everything else.
Cut everything the same size
Aim for Β½-inch pieces of apple, celery and cucumber so every bite has all three instead of one big chunk.
Chill before serving
Give the salad at least 30 minutes in the fridge so the dressing thickens and the celery firms back up.
Add nuts at the end
Stir in toasted walnuts or pecans in the last 5 minutes before serving so they stay crisp instead of going soft in the dressing.
