Salt the cucumbers first
Toss sliced cucumbers with salt and let them sit 15 to 20 minutes, then drain. It pulls out water so the dressing doesn't turn thin.
Rinse canned beans well
Drain chickpeas or black beans and rinse under cool water for 30 seconds, then shake dry so the dressing clings instead of sliding off.
Cool the quinoa
Spread cooked quinoa on a sheet pan for 10 minutes before dressing it. Warm grains soak up too much oil and go gummy.
Massage the kale
Rub chopped kale with a spoonful of oil and a pinch of salt for about 2 minutes until it darkens and softens.
