Warm cider low and slow
Heat cider with cinnamon sticks and star anise over low heat for 20 to 30 minutes so it never boils and turns bitter.
Chop the chocolate fine
Grate or finely chop a chocolate bar before it hits the milk; small pieces melt smooth in about 3 minutes with steady whisking.
Mix punch just before serving
Add seltzer or sparkling juice in the last 5 minutes so the punch still fizzes when the first glass is poured.
Chill the cream first
Whip heavy cream straight from the fridge, and put the bowl in the freezer 10 minutes ahead for faster, sturdier peaks.
