Chicken Thai noodles with red curry

Spicy and easy recipe full of flavor for a quick weeknight meal

Ingredients

  • 1 lb Chicken breast cut into cubes
  • 2 TB Chili sesame oil
  • Salt and pepper
  • 1/3 cup Red Thai curry sauce
  • 3 Scallions- chopped
  • 1 Jalapeño-chopped
  • 1 Lime
  • Whole wheat Thai noodles
  • 1/4 cup Coconut milk

Instructions

  1. 1Heat chili sesame oil until hot and cook chicken breast until almost cooked. Season with salt and pepper.
  2. 2Pour red curry sauce and cook until thickened. Pour in noodles on top and cook.
  3. 3Throw in scallions and jalapeño and cook. Then pour over the coconut milk and simmer until thick. Squeeze lime over.
