Bloom the spices first
Cook curry powder or paste in hot oil for 30 to 60 seconds before adding liquid. It smells sharp at first, then turns rich.
Use thighs for simmering
Boneless thighs hold up to 25 or 30 minutes in sauce without drying out. Breast meat is better cut in 2-inch cubes and added in the last 10.
Add coconut milk last
Stir in the coconut cream or milk at the end and keep it at a bare simmer. A hard boil for even 5 minutes can make it separate.
Start the rice early
White rice needs about 18 minutes plus 5 to sit covered. Get it going before the chicken so nothing waits.
