Cut them the same size
Halve baby reds or cut larger potatoes into 1 to 1 1/2-inch chunks so everything finishes at once.
Preheat the pan
Put the sheet pan in the oven while it heats to 425°F, then add the oiled potatoes so they start crisping the second they land.
Give them room
Spread potatoes in one layer with a little space between; two pans beat one crowded pan every time.
Add cheese at the end
Stir in parmesan during the last 5 to 10 minutes so it browns instead of burning.
