Open in Pepper →Taco salad is what you make when the meat's browned, the lettuce is chopped, and everybody builds their own plate. Nobody argues, and there's one skillet to wash.
Cooks on Pepper reach for this collection on hot nights when the oven stays off, on Tuesdays when the fridge has half a bag of cabbage, and when they need lunch to travel without wilting.
Every recipe here starts with browned ground beef, chicken, or turkey and a packet of taco seasoning. There's cowboy taco salad with black beans and corn, Doritos taco salad with Catalina dressing, chicken taco salad, taco salad with cilantro lime dressing, easy taco salad jars, and taco salad boats.
Drain the beef well
Brown 1 pound of ground beef 6 to 8 minutes, then pour off the fat before adding seasoning and water, or the dressing slides right off the lettuce.
Rinse the canned beans
Dump black beans and corn in a colander and rinse 30 seconds under cool water so the salad doesn't taste like can liquid.
Cool the meat first
Let the seasoned beef sit 5 to 10 minutes off the heat before it hits the greens, or you'll have a bowl of wilted lettuce.
Add chips last
Crush the Doritos over the top right before you carry it to the table so they stay crunchy through second helpings.
