Ingredients

  • 1 bag cabbage
  • 1 can black beans
  • 1 can corn
  • 1 cup, chopped green onions
  • 1/2 cup, chopped jalapeño
  • 1/2 cup, chopped bell peppers
  • 1/2 cup mayo (avocado oil)
  • 1/2 cup sour cream
  • 1 tablespoon chipotle paste
  • 1 packet taco seasonings
  • 1/4 cup lime juice
  • as needed for topping Fritos chips

Instructions

  1. 1Prepare the vegetables and set aside.
  2. 2In a bowl, mix mayonnaise, sour cream, chipotle paste, taco seasonings, and lime juice until well combined to make the dressing.
  3. 3Add the dressing to the prepared vegetables and mix evenly.
  4. 4Add the black beans, corn, and Fritos chips to the salad and mix gently.
  5. 5Serve immediately and enjoy!

    Drain the beef well

    Brown 1 pound of ground beef 6 to 8 minutes, then pour off the fat before adding seasoning and water, or the dressing slides right off the lettuce.
