This taco pie is an easy weeknight meal and a great way to change up taco Tuesday!

Ingredients

  • 1 lb Ground beef
  • 1 Onion, diced
  • 1 packet Taco Seasoning
  • Dan-O’s Hot Chipotle Seasoning
  • 1 TBSP Minced garlic
  • 1 can Rotel, drained
  • 1/2 cup Bisquick
  • 2 Eggs
  • 3/4 cup Milk
  • 2 cups Shredded cheddar cheese

Instructions

  1. 1Brown ground beef with a diced onion. Season with taco seasoning, minced garlic, and as much Dan-O’s Hot Chipotle as you’d like!
  2. 2Drain the grease off of the ground beef. Drain one can of Rotel and add to the ground beef mixture.
  3. 3In a bowl, mix together Bisquick, eggs, and milk.
  4. 4Grease a pie dish and pour half of the meat mixture into the dish. Top that with one cup of cheddar cheese. Pour the rest of the ground beef into the dish and add the rest of the cheese on top.
  5. 5Pour the Bisquick mixture over the ground beef and cheese. For extra Chipotle flavor, add more Dan-O’s Hot Chipotle seasoning on top of the taco pie!
  6. 6Bake in the oven at 400 degrees for about 25 minutes.
  7. 7Serve and enjoy! I like topping this with shredded lettuce, tomatoes, sour cream, taco sauce, and jalapeños!

Taco Night That Bakes In One Dish

Taco pie takes everything good about taco night and puts it in a pan you can cut into squares. No assembly line on the counter, no shells cracking, just scoop and serve.

Cooks on Pepper reach for these on the nights a pound of ground beef and a packet of taco seasoning are all that's in the house, and everybody still needs to eat by six.

Every recipe here starts with browned beef and seasoning and goes its own way: Frito Taco Pie with the corn chips on top, Crustless Taco Pie with heavy cream stirred in, a cornbread version built on Jiffy Corn Muffin Mix and sour cream, Cheesy Rotel Taco Pie with a block of Velveeta, and Denise's Mile High Taco Pie layered with tortillas and chicken.

Quick Tips

    Drain the beef well

    Pour off the grease after browning a pound of ground beef, or the bottom of the pie turns soupy under the cheese.

    Cook the seasoning down

    Add the taco seasoning with about a cup of water and simmer 4 to 5 minutes until it clings to the meat instead of running.

    Add chips at the end

    Scatter Fritos or crushed chips over the top in the last 5 minutes of baking so they stay crunchy.

    Let it rest before cutting

    Give the pie 10 minutes out of the oven so the cheese sets and the squares come out whole.
