Pat the shrimp dry
Blot thawed shrimp with paper towels before they hit the pan so they sear instead of steam. Wet shrimp will drop your pan temperature fast.
Cook shrimp last
Stir-fry the broccoli and other vegetables first, then add shrimp for the final 3 minutes. They're done when they curl into a loose C and turn opaque.
Thicken the sauce separately
Stir 1 tablespoon cornstarch into 2 tablespoons cold water, then pour it into the simmering sweet and sour sauce and cook 1 minute until it coats a spoon.
Drain the pineapple well
Press canned pineapple chunks in a strainer before adding them, or the extra juice will thin your sauce and make everything watery.
