Ingredients

  • 2 tablespoons avocado oil
  • 3 tablespoons butter
  • 8 ounces small cooked shrimp
  • cajun seasoning (to taste)
  • 1 yellow onion (diced)
  • 1 green bell pepper (diced)
  • 8 ounces smoked sausage (sliced)
  • 8 ounces fettuccine noodles
  • 8 garlic cloves (minced)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 5 ounces parmesan cheese (grated) plus more for garnish
  • 2 teaspoons cayenne pepper
  • onion powder ( to taste)
  • fresh parsley (for garnish)
  • aleppo pepper (for garnish)

Instructions

  1. 1In a pot, bring water to a boil and season with some cajun seasoning. Cook the pasta until al dente. Drain, saving about 1/2 cup of pasta water.
  2. 2Meanwhile, in a pot or skillet on medium high heat, heat the oil and brown down the sausage. Once it starts to brown, remove and add in the butter, onion, and peppers. Saute for about 25 minutes on medium low heat. Add in the garlic and saute for another 3 minutes.
  3. 3Toss in the sausage and the shrimp; let saute for about 5 minutes; until the shrimp are warmed through.
  4. 4Pour in the heavy cream and stock, season with cayenne, onion powder, and cajun seasoning (to your liking) and bring to a simmer. Add about a 1/2 cup of pasta water and grate in the parmesan cheese. Stir and simmer until melted and it begins to thicken.
  5. 5Serve, hot, garnished with more cheese, parsley, and aleppo!
