Shrimp, Lemon, Garlic, Olive Oil

Shrimp is the fastest protein in the kitchen — three minutes on the heat and dinner is done. Add feta, lemon, olive oil, and oregano and you have a Mediterranean plate in under 20 minutes.

Cooks on Pepper reach for this collection when they need dinner done fast without cutting corners on flavor.

Every recipe here builds around the same handful of Mediterranean staples: garlic, olive oil, tomato, feta, and a squeeze of lemon over quick-cooked shrimp.

Quick Tips

  1. 1

    Don't overcook shrimp

Two to three minutes per side is all it takes — past that, they turn to rubber.

  2. 2

    Pat shrimp dry before searing

Wet shrimp steam instead of browning — a paper towel is the difference.

  3. 3

    Peel and devein up front

Save the shell time by buying peeled, deveined shrimp — the cook goes twice as fast.

  4. 4

    Finish with lemon zest

Zest over the plate at the end — bright, floral, doesn't cook off like juice does.
