Brown the sausage first
Slice the smoked sausage into coins and brown it 5 to 6 minutes before anything else goes in, then cook the potatoes in that fat.
Cut potatoes the same size
Halve or quarter gold potatoes into 1 1/2-inch pieces so they all get tender at the same time instead of some turning to mush.
Add green beans later
Fresh green beans only need the last 20 to 25 minutes in a crockpot on low, or they go gray and stringy.
Season at the end
Smoked sausage and Cajun seasoning both carry a lot of salt, so taste after the potatoes are soft before adding any more.
