Open in Pepper →Rice on the stove wants watching. This kind goes in a dish with butter and broth, into the oven, and comes out soft and brown-buttery without you standing over it.
Cooks on Pepper reach for this collection on the nights the oven is already on and the main dish still needs a side, or when a can of soup and a cup of rice is all that's left in the pantry.
Every recipe here is that same easy pan: Beefy Butter Rice and French Onion Butter Rice, two versions of Stick of Butter Rice, Stick of Butter Rice & Beef Tips, Miracle Herb-Butter Rice, Grandma's Baked Rice with Mushrooms, Stick of Butter Rice with Chicken and Mushrooms, and plain Baked Rice.
Skip the instant rice
Use long-grain white rice, not instant or minute rice — instant turns to mush in the 60 to 90 minutes this spends in the oven.
Cover it tight
Seal the dish with foil for the first 30 minutes so the steam stays in, then uncover for the last 15 to 20 to brown the top.
Watch the salt
Canned French onion soup and beef consomme are both salty, so use low-sodium broth and taste before adding any salt at the end.
Let it sit
Rest the rice 10 minutes after it comes out of the oven so the last of the liquid soaks in, then fluff with a fork.
