Open in Pepper →A hot skillet, a good piece of steak, and eggs cooked the way your people like them — that's a whole meal with almost no planning. It's the kind of thing you can pull together before work or at seven at night when nobody wants to think about dinner.
Cooks on Pepper reach for this collection on slow Saturday mornings, on payday when there's a ribeye in the fridge, and on the nights breakfast for supper is the only thing everybody will agree on.
Every recipe here keeps it simple: plain steak and eggs, steak with eggs and potatoes, a steak eggs hashbrowns chipotle burrito, ramen with steak and soft-boiled eggs, steak and eggs with avocado, and a steak, egg, and cheese breakfast sandwich.
Let the steak sit out
Pull the steak from the fridge 30 minutes before cooking so it browns evenly instead of steaming in the pan.
Get the skillet screaming hot
Heat cast iron over medium-high for 4 to 5 minutes before the steak goes in, and don't move it for the first 3 minutes.
Rest before you slice
Give the steak 5 to 10 minutes on a plate after cooking, then cut against the grain so it stays juicy.
Cook eggs in the drippings
Turn the heat to medium-low and crack the eggs into the same pan; 2 to 3 minutes gives you set whites and a runny yolk.
