Ingredients

  • ¾ cups bacon bits, cooked
  • 7 large eggs
  • 1 cup cottage cheese
  • 1 cup Colby Jack cheese, shredded
  • ¼ tsp salt
  • ¼ tsp black pepper
  • as needed cooking oil spray

Instructions

  1. 1Preheat the oven to 375°F (190°C). Spray a baking dish with cooking oil spray.
  2. 2In a mixing bowl, beat the eggs until well combined.
  3. 3Add the cottage cheese, shredded Colby Jack cheese, salt, and black pepper to the eggs. Mix well.
  4. 4Fold in the cooked bacon bits.
  5. 5Pour the mixture into the prepared baking dish.
  6. 6Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is slightly golden.
