Open in Pepper →A pot of Spanish rice stretches whatever else is on the table. With rice, an onion, and a can of tomatoes, you've got a side that feeds everybody, and with a pound of ground beef stirred in, it's the whole supper.
Cooks on Pepper reach for this collection on taco night, when the main dish needs company, or on those evenings when dinner has to come out of the pantry and the freezer.
Every recipe here starts with rice and onion and goes its own way: Rice Cooker Spanish Rice with Rotel, Homemade Spanish Rice with chicken bouillon, White Girl Spanish Rice with hamburger and bell pepper, Spanish Rice and Beans, and a Simple Spanish Rice with no tomatoes at all.
Toast the rice first
Stir the dry rice in 2 tablespoons of hot oil for 3 to 5 minutes, until it smells nutty and turns golden. That step keeps the grains separate instead of gummy.
Brown the beef early
Cook a pound of ground beef with the diced onion until no pink remains, about 7 minutes, then drain the fat before the rice and liquid go in.
Count the tomatoes as liquid
A can of Rotel or a cup of diced tomatoes counts toward your total liquid, so cut the broth or water by the same amount or the rice turns soupy.
Let it rest covered
Pull the pot off the heat and leave the lid on for 10 minutes before fluffing. The steam finishes the grains on the top layer.
