Open in Pepper →Shrimp cooks in about three minutes, which makes it the fastest supper protein in the house. Chill it, toss it with something crunchy, and you have dinner without turning on the oven.
Cooks on Pepper reach for these when it's too hot to cook, when lunch needs to be ready ahead, or when there's a bag of shrimp in the freezer and thirty minutes before everyone's hungry.
Every recipe here is a real shrimp salad, from the creamy, mayonnaise-and-mustard New York Deli Shrimp Salad to the Creamy Cucumber Shrimp Salad with cherry tomatoes, plus Cajun Shrimp Salad, Lime Shrimp Salad, Summer Shrimp Salad with roasted corn, and Shrimp Salad Stuffed Avocado.
Pull the shrimp early
Shrimp are done when they curl into a loose C and turn opaque, usually 2 to 3 minutes. Any longer and they go rubbery once chilled.
Shock them in ice water
Drop cooked shrimp straight into a bowl of ice water for 5 minutes to stop the cooking and firm them up before chopping.
Salt the cucumbers first
Toss sliced cucumber with 1/2 teaspoon salt and let it drain 15 minutes, then pat dry so the dressing doesn't go watery.
Dress it just before serving
Keep shrimp, vegetables, and dressing separate in the fridge up to a day, then stir together within 30 minutes of eating.
