Pat the salmon dry
Blot both sides with paper towels before seasoning so the surface browns instead of steaming. Two minutes of drying makes a real difference.
Start the rice first
White rice needs about 18 minutes plus a 10-minute rest, and salmon cooks in under 15, so get the rice going before you touch the fish.
Cube it for teriyaki
Cut salmon into 1-inch pieces so every side picks up glaze; they cook through in 6 to 8 minutes in a hot skillet.
Sauce after cooking
Mayo-based bang bang sauce and honey glazes burn fast, so brush or drizzle them on in the last 2 minutes or once the fish is off the heat.
