Open in Pepper →A loaf of pumpkin bread with chocolate chips does a lot of work around the house. It's breakfast standing at the counter, an after-school snack, and something to hand a neighbor still warm in the pan.
Cooks on Pepper reach for this collection when the weather turns and there's a can of pumpkin in the cabinet, or when they need something easy to bake on a Sunday that'll last through the week.
Every recipe here is a pumpkin loaf with chocolate chips: the classic Pumpkin Chocolate Chip Bread, a straightforward Chocolate Chip Pumpkin Bread, a Pumpkin Chocolate Chip Streusel Bread with a brown sugar topping, and a Pumpkin Oatmeal Chocolate Chip Bread made with rolled oats.
Don't overmix the batter
Stir just until the flour disappears, about 10 to 15 strokes. Overmixing makes the loaf tough and dense instead of tender.
Toss chips in flour
Coat the chocolate chips in 1 tablespoon of the measured flour before folding them in so they stay suspended instead of sinking.
Tent with foil
If the top is browning too fast around the 40-minute mark, lay a piece of foil loosely over the pan for the rest of the bake.
Cool before slicing
Let the loaf rest in the pan 15 minutes, then finish cooling on a rack at least 30 minutes so the slices hold together.
