Pork Chops That Stay Juicy In The Oven

A pork chop is one of the easiest things to buy and one of the easiest things to dry out. The oven fixes that, as long as you season well and pull them before they go past done.

Cooks on Pepper reach for these on nights when the sheet pan does the work — chops on one side, potatoes and broccoli on the other, dinner out in one go.

Every recipe here is built around that: Oven Baked Boneless Pork Chops with brown sugar and smoked paprika, Stuffed Pork Chops with green onion cream cheese, Asparagus Stuffed Pork Chops, Crispy Baked Pork Chops, and Baked Pork Chops with Parmesan and Seasoned Breadcrumbs.

Quick Tips

  1. 1

    Buy them thick

Look for chops at least 1 inch thick. Thin chops overcook in the time it takes to get any color on them.

  2. 2

    Pat the chops dry

Blot both sides with paper towels before seasoning so the rub sticks and the outside browns instead of steaming.

  3. 3

    Pull at 145 degrees

Check the thickest part with a thermometer and take them out at 145°F. They keep cooking on the counter.

  4. 4

    Rest before slicing

Let the chops sit 5 minutes under loose foil so the juices stay in the meat and not on the cutting board.
