Pat the chops dry
Blot both sides with paper towels before breading so the egg grabs the meat. Wet chops shed their crumbs in the pan.
Set the pan on a rack
Bake on a wire rack over a sheet pan so hot air hits the bottom crust. No soggy underside, no flipping halfway.
Cook to 145 degrees
Pull the chops at 145°F in the thickest part, checked with an instant-read thermometer. Thin chops can hit that in 15 to 18 minutes.
Rest before cutting
Let the chops sit 5 minutes on the pan so the juices settle back in. Slicing right away runs them dry.
