Shrimp Pasta in White Wine Sauce

This white wine sauce is easy to make and pairs so well with seafood. The sauce is rich and creamy. The complex flavors will have you back in your kitchen making more! Don’t know which white wine to use? Try a dry white like Sauvignon Blanc, Charonnay, Pinot Grigio, or my favorite Dry Vermouth.

Ingredients

  • 8 oz Gemelli pasta
  • 4 Tbsp Butter - salted
  • 4 cloves Garlic - minced
  • 1 Shallot - minced
  • 1 Tbsp Flour
  • 1/2 cup White wine - dry vermouth
  • 1/2 cup Heavy cream
  • 1/4 cup Parmesan - grated
  • 1 tsp Salt
  • 8 oz Shrimp - small, peeled, deveined, washed
  • 1 Tbsp Parsley - minced

Instructions

  1. 1In a large pot, bring salted water to a boil, cook your pasta according to package
  2. 2In a non-stick sauté pan, gently melt the butter on medium low heat
  3. 3Sauté garlic and shallots for 2 minutes
  4. 4Add in the flour, cook while stirring consistently for 3 minutes
  5. 5Slowly add in the white wine, simmer for 2 minutes
  6. 6Slowly stir in the cream and shrimp, let it simmer on low for another 4 minutes
  7. 7Stir in the parmesan cheese, salt and pasta, serve and Enjoy!

    Pat the shrimp dry

    Blot shrimp with paper towels before they hit the pan so they sear instead of steam. Wet shrimp will water down your sauce.

    Cook shrimp two minutes

    Give them about 1 to 2 minutes per side, just until they curl into a C and turn pink. Pull them out and add them back at the end.

    Save the pasta water

    Reserve 1/2 cup of the starchy water before draining and stir it into the butter and garlic to make the sauce cling.

    Let the wine cook down

    Simmer the white wine 2 to 3 minutes before adding butter so the sharp edge cooks off and the flavor concentrates.
